Breakfast Ideas

I’ve been having this: egg-on-ham with balsamic vinegar, taken from a breakfast I replicated from a recipe the Hotel Sofitel was serving at their Chicago brunch, though I can see it’s no longer on their menu which is a pity – it was delicious!

I either get 2 pieces of bacon, or 3 slices of salami, or one piece of virginia ham (Sofitel used a couple of pieces of prosciutto), pan fried to heat up.

I make one egg sunny side up, with salt + pepper. Then heat up a few tablespoons of balsamic vinegar, for just over hot, when it becomes thickened. Then put the egg on the ham/bacon/prosciutto/salami, and the balsamic over top.

Delicious!

*I’d love to hear of any radish-as-potato recipes anyone uses here, I love radishes, and just heard of that substitution recently!
