Easter Candy

I don’t think that my insulin pump can cover all of the Cadbury eggs that I want to eat.

There are 28g of Carbs in each one.
My ratio is 12:1
I usually get about 165 units in my reservoir
soooo…that’s about 71 eggs

I may need a bucket (any other monty python fans out there?), or an alternate plan.

May be easier to make your own chocolate eggs!

You can melt unsweetened baker’s chocolate, add sweetener, peanut butter, unsweetend coconuts, nuts, etc. & make just about any candy with lots less carbs. (Love Monty Python.)

LOL! Too funny:) 1 word Moderation! Take the 28 eggs…split them up over a few days! Your eating the amount you usually eat, just over a 3 or 4 day period

That is a great idea!. It seems that we all share the love/hate relationship with carbs.

Excellent point. Moderation is key. I think that is a perfect word for the “One Word” discussion.

I wish they could. Don’t all diabetics have a sweet tooth? If they can make Coke Zero, surely they can make a better low sugar/carb candy.

I actually bought a cadbury egg today after reading this post, LOL. I figured I am good about what I eat and I am on a pump, so why not?

A cadbury egg has been sitting on my coffee table since Monday (my husband bought it for himself…he’s never had one!). After reading this post, it’s calling my name! Must. Show. Restraint!

Dear Friends,

Here’s an alternative that’s very rich & yummy. And even if you eat them all, it’s still less than one Cadbury egg. Indulge & enjoy! We deserve it.

Makes 16 truffles, 1 carb each

1 oz (1 square) unsweetened baker’s chocolate
1/3 cup natural smooth peanut butter (no sugar added)
2 Tbs. butter, softened
1/3 cup ricotta cheese
1 Tbs vanilla extract
1 Tbs almond extract
stevia (or whatever sweetener you like)

Melt chocolate.Stir in butter, peanut butter & ricotta until smooth. Add vanilla & almond extact & sweetener. Drop by rounded teaspoons on to waxed paper & chill until firm.

You can roll in chopped nuts or in unsweetened grated coconut. I didn’t figure in the carbs for these additions, but can’t be much.
