Easy Zero Carb Egg Muffins

This is a fantastic breakfast idea. They’re in my oven as I type.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Easy Zero Carb Egg Muffins

Ingredients

2 spicy Italian sausage links
1tblsp butter
6 eggs
1c shredded cheddar cheese
2tsp hot sauce
To taste
Red pepper flakes
Fresh cracked pepper
Instructions

Pre-heat the oven to 350°F and spray a jumbo muffin tin with non-stick spray.
Slice sausage links into bite-sized pieces; saute in butter over medium high heat.
Evenly distribute sausage on the bottom of each muffin cup.
Beat the eggs, hot sauce and pepper together; add the cheese and mix thoroughly.
Evenly pour the eggs over the sausage.
Bake for 20 minutes. Turn off the oven and let them set an additional 5 minutes in the hot oven before removing.

Sound good, but they are really just individual frittatta.
Cheese and bacon
Cheese and tomato
Cheese bacon tomato and herbs
Tuna and cheese
Just a few suggestions, but any leftovers such as cold roast chicken is also possible.

I think it is more like mini crustless quiche. In either case it sounds delicious, and anything with bacon in it is ok with me.

Forgot to say veggies can be added too.
I never do the frying pan in the oven or under the grill thing with frittata and I suppose they really should be called crustless quiche.
The little ones are great packed for lunch at school or work.
