Great Easy Soup!

I just made this today and it was really tasty, cheap, and loaded with veggies!

ITALIAN CHICKEN NOODLE SOUP

2 tbs olive oil
1 lg red onion chopped small
5 celery stalks chopped small
3 cloves minced garlic
2 tbs parsley
2 lbs tomatoes (I used 3 great big ones)
8 cups water
5 chicken bullion cubes
1/4 c chopped fresh basil
12 oz small egg noodles
1 lb chopped up chicken

  1. Cut up veggies really small and saute with the olive oil (add the tomatoes last after the others have cooked - once they are in its practiacly soup - I used my food processor to get everything really small)
  2. Add garlic and seasonings
  3. Add water and bullion cubes
  4. Add cooked chicken ( I bought a roasted chicken from the store to save time)
  5. Add bag of noodles
  6. Cook till noodles are soft, add salt and pepper to taste

One realy BIG bowl (a bit more than 2 cups) is 405 calories - 13g fat, 50 carbs, 22 protien. This recipie makes about 12 cups of soup!
