Roasted Veggies

Ingredients:
1 large onion ( I like Walla Walla Sweets)
2 potatoes
1 red bell pepper
1 yellow bell pepper
1 zucchini
1 cup carrots (mini or reg. sliced)
3/4 cup olive oil
1 Tbs Basil
1 Tbs Oregano
1 Tbs Thyme
1 tsp crushed bay leaf
Salt and Pepper to taste

Directions:
Preheat oven to 400 degrees F
Slice all veggies and place in mixing bowl
Combine olive oil, herbs and salt/pepper and pour over veggies, turn veggies to coat with oil mixture, transfer to baking dish and top with foil. Bake in oven 35-40 mins or until veggies are tender.

I just learned how to roast veggies and I love onions and carrots this way. Didn't really like peppers, but maybe I didn't cook them long enough. Anyway, I can now add a new way of cooking veggies to my recipe file.
