What's an "Acceptable" 1-hour-post-meal peak for you? How do you handle them?

Look at the black doted line, it looks like you have some issues in the evening and also when you sleep. I would never go to sleep without fixing my high BG first. It takes a true average of about 115mg/dL for me to keep my A1c under 6.0.

You need to look at your good days and try to mimic what you did on those days.
