I love food. Just sayin! This is one of my very favorite, easy on the blood sugar breakfast recipes. I top with Walden Farms 0 carb syrup, some whip cream (yes low carb, straight from the can!) and sometimes nuts or a few berries.
You can also add a tablespoon or so of coconut flour to the batter to fluff em up a little!

2 oz cream cheese
2 eggs
1 tsp granulated sugar substitute (IBIH recommends)
½ tsp cinnamon

Any chance I could replace the granulated sweetener with either liquid stevia or sucralose (Splend)?
I find that there’s usually dextrose mixed in with most granulated sugar substitutes, which affects my BG as much as sugar does.

Yes! I use liquid most often instead of granulated. I have similar issues with my digits and granulated.

I tried 'em this morning - not bad. Will take a little playing, though, to get everything just right (I may have skimped on the cream cheese!). I used a hand blender - start-to-finish was a little over 9 minutes.
Awesome! So glad you tried them! I have played with adding a little coconut flour (maybe 1 tablespoon). Also, once you make the batter, it helps to let it sit for a minute while the pan gets hot. Great! Now I am craving some!
I make these all the time. I triple the recipe and snack on the extras. They are so low carb I often put 1/4 cup of berries on top of them with sugar free syrup.
I don’t freeze them I just put them in a baggie in the fridge. Sometimes I add a little vanilla to give them more flavor . I make them in a small crepe pan and often make them big like crepes. You could then fill them with whipped cream and berries or anything you want.
I did MayaK. I love the pancakes. I was just trying to make them a little thicker so I poured the batter into a cookie cutter. It was either hearts or candy cane. Lol.
