I am planning a very similar dinner for this Saturday. I prefer to prepare my corned beef with a braising technique rather than boiling. I like to keep all the flavors concentrated and I hate the idea of all the corned beef goodness washing out into the water and going to waste. The long slow cooking breaks down all the collagen in the meat and makes the liquid a nutritious source of protein. And instead of boiled cabbage, it will be cole slaw on the side. All in all I'm looking forward to it. Too bad St. Patricks day isn't every Saturday.
