I’m working on low carb oreos. Can’t get them crispy enough.
I think its a cool idea. Perhaps someone should start a separate thread so as to not hijack this one, and everyone could share their ideas and recipes. The low carb / no carb snacks and low carb / no carb dessert sections would be huge hits.

Pork rinds or cracklin have been promoted as being a better alternative to the regular snack just. I think it has low or no carbs to it. Not sure which. Don’t turn your nose up till you have tried it. Hoghead tastes good too but not as healthy.

Pork rinds have no carbs. It’s pig skin that’s dried & then deep fried.

Actually, I’ve been considering selling products. Seeing the unhealthy junk marketed to diabetics upsets me. We need easy, healthy low carb products. I did some research & it’s too expensive to develop anything that needs refigeration. I’ve been experimenting with an alternative granola type bar with no grain. Made some that taste great, but they don’t hold up well. They need chemicals (nope) to keep from falling apart.
Dont diet full stop. The more you think about food the more hormones you will release to make you fatter (this is actually true) learn how to eat healthy and exercise and make it part of your life not a thought. Yes Aitkens is low in carb - but you can look at any food label (learn to read them). If you have the nibbles or want a snack have a list of free foods on your fridge so you dont have to think.
When you are on insulin??? you do want to keep carbs lower to keep dosage down as insulin is a weight associated hormone, go for 30g of carb per meal and will soon drop off and dont worry about your spreads, dressings etc… Good luck and get moving

Where did you get those cool nutrition charts. Being a nerd I love things like that.
I signed up for NutritionData.com. They are free, and they let you search all foods for their carbs, glycemic load, calories, etc, and enter any foods you want to, as well… Also, they let you analyze recipes, and even for serving size, etc. There was a lot more to that nutrition info, such as loads of info on vitamins, etc… but meh… I thought it’d be overload to post it. lol
Gerri has a good list of recipe sites. I like Lindas (http://genaw.com/lowcarb/). I also follow Dana Carpenter, who has written a number of good low carb cook books. Dr. B has a recipe book, although it is not very creative. George Stella is also another good low carb author.
Another good source of recipes is the Protein Power/Paleo community. Michael Eades and his wife have written extensively over the years and have great recipes. And then there is the Atkins community itself, with several diet forums with extensive recipes.
In truth, I am a “gut” cook. I don’t follow recipes all that much, sometimes I will look for ideas, but generally I just wing it.
I went on atkins didn’t realise that my ketones were actually because of an issue with my pump and ended up in A & E with DKA
