Going for my C-Peptide and GAD tests tomorrow to try to gain some better insight into my unclear diagnosis. Will I have to pay this out of pocket or will Blue Cross insurance (or any other major insurance) cover this?

It totally depends on the details of your plan. Each plan is different, even with the same insurer there can be a lot of differences in what is covered as they offer different plans.
Call the customer service number on the back of your insurance card and if you are lucky someone can tell you the answer based on your ID.
