Holidays and Diabetics-Turning Lemons into Sugar-Free Lemonade

Thanksgiving is around the corner! Even with all of the difficulties that the holidays can bring us (tempting food thats full of carbs and sugar and high stress situations)…I try to view the holidays with as much optimism as I can.

My way to turn this lemon into sugar-free lemonade :slight_smile: is to focus on the good things that I can enjoy which aren’t terrible on diabetics. For me its the turkey bone gumbo that I can make with the leftover turkey carcass and getting some extra days to relax with my hubby.

There are two meals all year that I plan to go off-script. Thanksgiving and Christmas dinner. I can have dessert, I just plan for it and am strategic.

A couple years ago, Thanksgiving became a train wreck not because of the food per se, but because my infusion set had been dislodged and all that insulin goodness was going everywhere but in me. On me, my t-shirt maybe even down my leg-- but not IN me!

Would I have beignets and fresh squeezed O.J. on Christmas morning like my sister and her family do? Probably not. But a bit of homemade pie will find its way into my stomach. Even now, some frozen or fresh turkey is in mortal fear of me-- if they know what’s good for them.

I am going to try a new way to roast the turkey this year for our pot-luck meal and have ordered a gluten-free pumpkin pie so my husband can enjoy dessert this year, too. Go Afrezza!!

mmmm I looove lemon deserts. My mother-in-law makes lemon raspberry bars that are my ultimate weakness. If you’re making this, please let me know how they turn out. I’ve never baked with almond flour or coconut flour.

Sorry for your trainwreck, that sounds disastrous. I’m glad you can still enjoy the holidays. A piece of pie every once in a while (especially a holiday where its something special) isn’t too bad. We’re human. :slight_smile:
