Lentil roll

This recipe is for a simple lentil roll.

Red lentils - 1 cup
Paprika - 1 tbsp
Red onion - 1 chopped
Tomato - 1 chopped
Freshly cracked black pepper - 2 tbsp
Red wine vinegar - 1 tbsp
Olive oil - 1 tbsp
Lettuce - cut into thin strips - 1 cup
Whole wheat tortilla - 4

Wash the lentils. Boil the lentils with tomato, paprika, and vinegar. Meanwhile add oil to a pan. Saute the onions until they become soft. Add this to the cooked lentils. Add salt and pepper and combine with the lentil mixture. Allow the lentil mixture to cool. After it has cooled completely roll the lentil mixture into logs. Place the lentil log on the tortilla, then top it with the lettuce. Roll the tortilla and serve it with hot chilli sauce/tomato sauce.

My family loves lentils. We eat a lot of what you would call a lettuce or cabbage roll up(the lettuce or cabbage leaf instead of a tortilla). I think I might try the lentils instead of meat next time. Thanks for this.
