This is a recipe I’ve been experimenting with that is very versatile. It’s based on a recipe I found online from Betty Crocker’s recipes. You may experiment with the filling ingredients as you please.
Meat and Cheese Pie
2 cups precooked and chopped or ground meat
1 cup cheese
1 yellow onion, chopped
1 cup milk or cream
2 or 3 eggs
1/2 cup quick bread mix, low-carb recipe follows
other low-carb veggies (optional)
Preheat the oven to 350 and grease a pie pan. Mix all ingredients in a bowl. Pour into the pie pan and bake for 35-45 minutes, or until fork comes out clean when inserted into the pie. Cut it into 8 pieces and serve. Serves 8.

Low-carb Instant Bread Mix (a good substitute for Bisquick)
5 cups low-carb flour
3/4 cup plus 3 tbsp nonfat milk powder
equivalent of 1/2 cup plus 2 tbsp sugar
2 1/2 tbsp baking powder
5 tbsp margarine or butter or lard or oil
Mix the dry ingredients together in a large bowl. Cut in the fat you decide to use until it has the texture of coarse meal. I put the mixture in a clean 1/2 gallon pickle jar. You may modify the above pie recipe to work with the flour you decide to use.
