Tips: timing your insulin dose with meal digestion

This is a fascinating thread. We are ALL so VERY different. As I’ve aged (turning 65 in two months and T1D since 10 yrs old) I find I can handle fewer and fewer carbs. Can’t recall the last time I ate beans or legumes. Just can’t do it. 10 Wheat Thins one evening last week (I know it was a rare incidence of nothing else offered) and I was spiking like crazy. These conversations about fat have my attention even though I only eat olive oil and grass-fed fats or a 1/2 c of goat milk in coffee – it’s still FAT. I moved away from low-fat about ten years ago and thought it was a wise choice. And I also consume very few carbs. Mostly veggies but probably too much grass-fed beef (1x/week). Lots of wild fish. This thread is serious food for thought!
