Shawn - I just started to experiment with intermittent fasting for the last few weeks. I normally eat two meals a day, breakfast and dinner. On Wednesdays, I skip breakfast and that leads to a 24 hour fast. It has a multi-day good effect on my BGs. The three meals/day 7x/week regimen is a relatively new phenomena in human history. I think we as humans evolved to fast every once in a while. When I fast I feel alert and really don't crave food. I feel a sense of personal mastery when I do this. And, of course, I love the sideways BGs at 80-85.
I'm hooked on the recent phenomenom of three squares. What I do try and do though is graze litely and frequently. Exercise sure helps heaps.
I was on Byetta for four months and initially it killed my appetite. Unfortunately,that all came back and I ceased using it.
I really liked cold cereals (especially the sweetened ones), so when I learned about processed foods, I dreaded eliminating them. But, I've found a way to still have cold cereal - I just make it myself with different ingredients.
My "cereal" consists of almond or soy milk, 1 tsp. cinnamon, sliced almonds & walnuts, a few sunflower seeds, tsp. flax meal & a diced apple. Sometimes when I want it sweeter, I'll add 1/4 diced banana. Not much carbs & healthy fats in the nuts. A lot more fiber than eggs (which have none).

I don't mind eating eggs a lot, I'm just lazy and don't like to cook. So I make a low carb frittata or a low carb crustless quiche on Sunday and eat some for breakfast, lunch or dinner during the week when I'm allergic to the kitchen.
Hmmm…this is a tough one for me and quite frustrating. I am allergic to eggs as well as nuts, so no omelets or homemade granolas for me. I have been able to semi-successfully eat Cream of Wheat without a huge spike, but my breakfast options are limited by my allergies, as far as staying low-carb/high-protein. Good luck in your search!
I make homemade greek style yogurt from half heavy cream and half whole milk. It is rich and delicious and only about 4 g carbs per cup.
5.3 ounce of flavored Dannon Lite & Fit Greek is 8 carbs according to the label. Mixed with a few low sodium peanuts results in almost no sugar rise for me. Delicious
I either eat 3 eggs (with veggies and sometimes meat) or a protein shake.
My protein shake is whey protein, coconut milk, and berries.
Protein shake is low protein, low sodium, high protein and high fat (kind of).
Another reason why I'm happy to eat a lot of eggs is I have 10 laying hens, so I always have a lot of them on hand. When I have too many, I hard boil some and keep those in the refrigerator as something I can grab for a quick breakfast, too.
My neighbors had hens for awhile and what an improvement over store bought ones!
Sometimes I like something light, like 1 cup sliced strawberries in heavy whipping cream. This morning my breakfast was 6 oz of smoked brisket with 1T carolina bbq sauce.
I like peanut butter toast, but have switched to peanut butter on celery. Hummus on celery or lettuce works too.
Sometimes I have a BLT without the bread. I use Romaine lettuce to make a wrap of veggie bacon strips and sliced tomato.
Then, of course, there's always sliced tofu with soy sauce.
The new flavored Hummus products are delicious. I call the standard ones "Pumice".Zero flavor for me. We have a almond derived product sold here called Bitchin Sauce. It comes in four varieties. It makes eating carrot sticks,celery and zucchini really nice.
There is nothing I hate more than cooking in the morning, so Special K Protein Plus was always good for me. 19 carbs for 3/4 cup, plus 6 carbs for milk. Sometimes I add berries or banana slices.
I eat Greek yogurt almost every day for lunch, with fresh fruit. Is it difficult to make it? Do you need any special appliances/ingredients? Taste better than the store bought? I'm guessing it does.
I have a yogurt maker, but that is not required. You can keep the yogurt warm overnight in warm towels and it will be fine. I use half cream, half whole milk. They key to greek yogurt is to ferment it completely, 12 hours or so and then you can strain it, releasing extra liquid. The result is very thick and very low carb.

I do understand that the regular sunny side up, poached, scrambled and boiled can be monotonous ...I usually have a variety of omelets in the morning. Literally throw everything in there except the kitchen sink...wink. A variety of roasted turkey or chicken (left overs are ok), sauteed mushroom, ham, veggies like green peas, cabbage, carrots, chayote, onions with cheese makes a good omelet.
I used to eat a lot of muffins in a minute. I got tired of them but should start doing those again. My fav MIM was with cinnamon, I would slice it into rounds and cover it with SF syrup.
I actually need some carbs in the morning. I generally run 5 miles or do some heavy lifting and my body needs the fuel. Since I work a lot and go to school too I don't have a lot of time. I pretty much eat whole wheat toast with cheese melted on it or maybe PB before my workout. After my workout I eat a small banana and then later in the morning I eat an apple and an ounce of cheese.
