Breakfast

I know there have been lengthy discussions on the open forum about breakfast options, but what about low-carb ones? We are having a meat, an egg, and a slice of double fiber toast (10 carbs) plus water everyday, or occasionally crust-less quiche instead. Other options?

How about some of those almond/flax muffins? How about low carb pancakes? How about dinner for breakfast?

I have previously posted this elsewhere in this forum. Re posting here because it seems relevant.

I have found I need a very low carb breakfast to counteract dawn phenomenon.

Flaxseed microwave muffin 1.25 g carbs
1 egg 1g carbs
1 sausage patty 0g carbs
Total carbs 2.25

Sometimes I substitute a second egg for the sausage which boosts the carb count to 3.25

I usually add a little stevia to the above recipe.
They take only a minute in the microwave and pop right out of whatever you make them in.

This breakfast is very filling and I never get hungry before lunch.

You could also base your breakfast on the muffin and skip the eggs.
Eggs seem to be an ideal diabetic food, very filling and low carb, but they can get old every single day.

I g4et up early o go to the gym most mornings, so don’t have much time or want anything heavy, so i keep some sliced cheese and sliced cold meat in the fridge. I just grab something on the run. It works or me. I’m also managing to lose weight, which i need to do.

through out the week its the same, slice of Natures Own wheat bread (10c), with a slice of cheese, and a slice of meat (be it turkey, bologna, etc). Id like to swap out that toast for something less though. Weekends, we get fancier with bologna sausage gravy (also known as SOS), low carb pancakes, flax and WPI waffles. I try to keep the servings the same as the weekdays. When i get some time and the courage Im going to try crepes of some nature.

I broil hot Italian sausage from my pasture raised farmer. I also have cooked three pounds of bacon by baking in a slow oven and store it for breakfast. Leftover salmon with homemade buttermilk dressing is great. Many mornings are a bag of almonds from Trader Joe’s.I hate breakfast because I would rather eat carbs, but per Dr. B, I try to save my yogurt for later - I like yogurt with sweetener and sunflower seeds.

ahh forgot to mention all that is accompanied by eggs, ham steak, Canadian bacon, bacon, sausage, or some weisswurst.

Breakfast burrito!

They make these tortillas made by La Tortilla Factory, called Smart and Delicious. They have 10g carbs, but 7g are fiber. So I throw together an egg and whatever else (meat and cheese, usually) and eat a breakfast burrito. Well, it is about 6 to 8 in diam, so it’s more like a breakfast taco. They also have some larger ones that have 6 net grams of carbs. I thought I’d never be able to have a breakfast burrito again. Not the same, but I can almost imagine it is. = )

These are GREAT! I also use these types of tortillas to make my famous Beef, Onion and Cheese Burrito Enchiladas. These are a big hit in my family, well except with my vegetarian daughter.

Where do you purchase these?

Can you ad 4 for dinner? These dishes sound great!

Man Size Beef, Cheese and Onion Enchiladas

2 lbs hamburger
2 packs taco seasoning
8 10" low carb tortillas
1/2 c water
1/2 lb cheddar cheese
2 large onions, diced
1 can low carb enchilada sauce (almost all are low carb)
Seasoning to taste

Brown and drain crumbled hamburger, add taco seasoning and recommended water (check the taco seasoning pack). Cook according to seasoning directions. Grate cheese into a large bowl. Fill each tortilla with a generous helping of beef, onions and cheese. Try to use about 2/3 of the cheese, leaving a generous amount for topping. I'll often use more than a 1/2 lb. Wrap tightly and pack into 9x14 pan. Make sure the ends of the enchiladas are snug. Eight man sized enchilladas fit snugly in my pan. Pour and spread enchilada sauce on top. Add additional seasoning if you wish (ie. chili powder) and then spread the remainin cheese on top. Bake at 325 degrees for a half hour. Serve immediately.

By my count, each enchilada has like 22g of carbs, 12 g of fiber and 38 g of protein.

Wow. That is Man Size! I somehow feel there should be a slab of beef in there somewhere. =^)



Sounds great. Ill have to give it a whirl. I wonder if I can cut some carbs out someplace. Maybe an ultra low carb sauce (or packaged). Thanks!

Sorry, the tortilla is 18g carb, 11 g fiber, that is where most of the carbs come from. I don’t think you can rid of the tortilla and still call it an enchillada.

No, thats great to know. I can most likely toss in something like this to get a lower carb, Small Man Size. Adversely, I can pick up some of these and see how big they are too.

Actually, the La Tortilla burrito wraps are 18g carbs, 12 g fiber (not 11 as I said above). All you can do is give it a try. Be a man. Do it.

Ha! I just realized my shipment from Netrition is waiting at home today with both of those tortillas I mentioned in it.

In Sacramento, CA, I have seen them at Safeway, Raleys, and Walmart, at least. This linkshows some stores that carry them. Look by wherever the tortillas are. At least that is how they place them here.

I was all enthused, but I checked the ingredients, and it seems like they all contain Corn, which I cannot tolerate. I haven’t had any corn, unless accidentally, in 27 years.
