I dreamed up this very low carb recipe. Preparation time for an experienced cook is almost exactly half an hour. [I grate my own cheese and chop my own cauliflower! It's quicker if you get pre prepared stuff, but not so good]
Ingredients
none of these quantities matters much it's quite flexible
makes 4 generous portions
1/2 cauliflower, steamed/boiled in florets
1 onion, finely chopped and lightly fried [sauteed]
100g [4oz.] grated cheese [cheddar is ideal]
4 medium eggs,
150ml 2/3 cup of double [heavy] cream
pinch salt
Method
beat eggs cream and salt together
20cm 8 inch baking pan about 4cm [2 inches] deep [I use a silicone one!]
Put sauteed onion evenly on bottom of baking pan, follow with cauliflower, breaking the florets up a bit, then sprinkle on the cheese. Lastly pour the egg/cream mix over evenly.
Bake in the oven for about 40 minutes at 160 degrees Celsius [320 Fahrenheit] check the "custard" is cooked, by sticking a skewer or knife in. increase time as necessary
From the silicone pan, this will tip out easily.
serve hot or cold. With green veggies or salad
this is good for breakfast if there are any leftovers
cauliflower and cheese, low carb heaven!! im gonna go crazy and make it a shallot or a red onion! i may make this tomorrow!! ta!
Yummy idea! I make oven frittatas which are similar, I just add bacon, asparagus, broccoli, green beans, leftover meat to the eggs, cheese and onion. A real leftover dish.
this sounds like a lot of calories
& would not agree with my stomach
otherwise...yummy.
this is yummy whoever hasnt trie this yet....
i'm one of those high fat/low carbers who discounts any need to control calories.
As long as the carbs are LOW, high calories will not make you put on weight.

i dont care about the calories either. invited my (good cook) friend over for lunch and she raved. i threw in bits of jamon serrano but i think next time some mushrooms with that cream would be good...
I've been thinking of making a sweet version. Mixed berries and any extra sweetness from Stevia. Perhaps some cream cheese or bitter chocolate

This sounds like heaven, project cauliflower begins tomorrow.
oooh! sweet version!! omg!!
I find it difficult to make desserts, beccause so many classic recipes require starch/flour. So now I can make a fruit custard thingy.
