I just read an article in a magazine at work specifically about "wheat" having adverse effects on blood sugar. Not because wheat products are a carb generally, but the composition of wheat has changed over the years so that ppl could mass produce it and the final product is something that somehow causes quick spikes in blood sugar. I found that wheat sent me soaring higher & faster than other grains with the same amount of carbs & fiber. Lesson learned. Been low carb for going on four years & I don't eat any grains. Interesting what you noticed about wheat having a long term effect the following day. Don't believe I experienced that, or I may not have made the connection.
After I noticed the problem while testing for the first two weeks, I did read the "Wheat Belly" book and also some references to wheat in other places.

I hit a milestone (for me) this morning with a fasting blood sugar reading of 99. That's the first under-100 I've had in the morning.
Yay, for the happy fasting! I saw improvement without grains. We've been lead to believe that grains are essential. They're not. Then there's all the grain marketing about fiber. Vegetables have much more fiber than grains.
1 avocado 17.1 grams carbs, 13.5 grams fiber
2 slices whole wheat bread 23 grams carbs, 3.8 grams fiber
1 cup steel cut oats 55.4 grams carbs, 3.8 grams fiber
