Diabetic Dessert Revenge

I just came across this low carb simple chocolate cake recipe today on a low carb recipe website. I tried it (twice in one afternoon!!) and LOVE it! This will satify my chocolate cravings… and it has only 5-10g for a BIG serving!!

3 Minute Chocolate Carmel Flax Cake for One

Ingredients:
2 tablespoons melted butter (0 carbs)
1/4 cup Ground Flax Meal (5g carb, almost all fiber- check the packaging)
1 tablespoon Cocoa Powder (2 carbs)
1/4 teaspoon Baking Powder (1 carb)
2 tablespoons liquid sweetner or Davinci’s Carmel Sugar free Syrup (0- ? carbs)
1 Egg (0)

How To Prepare:
Melt butter in a small microwave safe dish, mine was about 2 1/2 inches x 5 inches and about 1 inch deep. Mix in all ingredients and microwave for 1 minute in the same dish.

Let cool slightly and enjoy.

Good with ice cream, whipped topping or plain yogurt.

Love the serving for one! No figuring out how much is a “serving.”

The first time I used the Davinci’s Carmel Syrup, but I thought that the flavor was not noticable enough. So in the next round, I used liquid splenda (I actually used only 1 tbsp). I also doubled the cocoa because I love rich chocolately things.

You can test it out a vary the ingredients to your liking!

If anyone doesn’t have liquid splenda or sugar free syrups, then I would try mixing a few tablespoons of Splenda into two tablespoons of water (the liquid from these 2 tablespoons is necessary).

I use this liquid sucralose, which I love!

I also drizzled plain yogurt over it. Nice part is that it is also filling!!!

All for doubling the cocoa!

I have DaVinci’s hazelnut syrup & it doesn’t have a whole lot of flavor. Mostly just tastes sweet.
