Diabetic Dessert Revenge

Christmas is coming up, and it’s going to be my first diabetic one. I’m pretty sure my family will make no changes to their regular eating, and this annoys me beyond belief. So, I have decided to come up with my own way of proving to them that diabetics can eat well, if not better, than non-diabetics. I am going to make the most delicious dessert on the planet for myself. While the others are eating their boring vanilla ice-cream, I will feast.

So far I’ve come up with an ice-cream sundae. I will use vanilla diabetic ice-cream (low fat, low sugar, and low GI), chocolate instant pudding with fat-free milk, chopped nuts, and melted Lindt 85% chocolate.

Uh huh, oh yeah.

Any other ingredients you could recommend? I guess I could always add sugar-free custard, but I’m not a huge fan of custard.

How about whipped cream in that pressurized can? A little squirt and you have a nice dollop for your sundae.

how about some strawberries or other berries? oh, baked or sauteed apples with butter and spices and splenda. the smell will drive them crazy! poached pears or peaches in wine. grilled pineapple or mango slices (Christmas is in summer there, right?) Crepes can be made ahead and frozen. the ultimate would be Julia Child’s “gateau of sweet crepes” it’s a big pile of crepes with some fillings.

for simple things, a platter of fresh fruit speared onto skewers - fruit kabobs
cantaloupe, watermelon and honeydew balls with Grand Marnier
frozen bananas

Great ideas Marie B! I’ll investigate the berries. I’ve seen them in the frozen food section of the supermarket, and hear they have loads of anti-oxidants and other good things. Yes, Christmas is in the middle of summer - the perfect time for ice-cream!

Strawberries are in season in late spring, so you may be able to get fresh. they are also pretty low in carbs. oh, I have a good recipe for strawberry shortcake! the cake is not very sugary. I’ll go find it! It’s also a show-stopper, which is what you’re looking for.

Ok, here is the recipe for the strawberry shortcake. I used to make it all the time. The cake itself here is what we southern people would call a biscuit. I did a quick add of the carbs using calorie king, and each serving is about 50 grams. It also looks very pretty.

Sometimes I layer fat-free/sugar free vanilla pudding with whipped cream, sugar-free jello, berries, and a bit of sugar-free chocolate syrup. Then I sprinkle the top with a bit toasted and chopped walnuts. I make it in tall, fancy parfait-type glasses. It gets a bit WOW factor every time.

yes the parfait glasses are great! presentation is important. you eat first with your eyes!

Here’s another that’s sinfully rich & really low carb. Best of all, it’s super easy!

Will get you the recipe if you like. It’s for chocolate truffles using unsweetened baker’s chocolate, ricotta cheese, peanut butter, vanilla extract, almond extract & artificial sweetner (I use stevia). You just melt the chocolate, stir in the other ingredients, roll into small balls & refigerate. You can put grated nuts on top, or coconut to make them look fancier.

For summer days ( 9 months/y) I get fresh fruit salad,top it with vanilla ice cream.faked almonds and sprinkle cinnamon on top.This is our favourite…

This year will be my first diabetic Christmas too. I see a lot of guesstimating in my future.

I plan on making chocolate topfencreme (don’t know how to translate that) with pears. Basically you mix chocolate pudding with quark (curd, pretty low carb) to make the cream, take 2-4 pear halves pour the cream on top, put it in the fridge for a bit and the decorate it with a scoop of vanilla ice cream and some dark chocolate. I love it.

I’m South African, and we have an ice cream called Dialite which is low sugar (but you still have to watch portion sizes for carbs in the milk). I have no idea if it’s available in the States.

Bake yourself a cake using Splenda for baking or make Brownies…yummy - I have a flourless recipe that is to die for and I suppose if you used brown sugar splenda, it would be pretty close to carb free. (It calls for 1/4 of corn starch and some semi-sweet chocolate chips).

That sounds excellent! Ricotta cheese is very low sodium, and I can find fat-free, which would balance the high saturated fats in the chocolate… plus the protein in the PB and the cheese…

I love ricotta chese. Here’s the recipe. Easy to double, triple or whatever. They keep forever, if they’re not gobbled up:)

Makes 16 truffles, only 1 carb each.

1 oz (1 square) unsweetened baker’s chocolate
1/3 cup natural smooth peanut butter (no sugar added)
2 Tbs. butter, softened
1/3 cup ricotta cheese
1 Tbs vanilla extract
1 Tbs almond extract
stevia (or whatever sweetner you like)

Melt chocolate.Stir in butter, peanut butter & ricotta until smooth. Add vanilla & almond extact & sweetner. Drop by rounded teaspoons on to waxed paper & chill until firm.

You can roll in chopped nuts or in unsweetened grated coconut. I didn’t figure in the carbs for these additions, but can’t be much.

I just found some new “Slim-a-bear” products that I think are Klondike, or branded that way. The traditional Klondike version is about 22g carbs, while they also make popsicle-style bars that run 12g carbs, which are perfect.
