Diabetic Foods

If there were fresh-frozen low-carb foods that used no artificial sweeteners (maybe Splenda/Stevia, which are not artificial) would there be interest in them at a reasonable price?

I’ve been thinking a lot about how the marketplace is flooded with unhealthy processed foods, sugar products, etc., but the only stuff in the “diabetic” food section is either too high in carbs or full of hidden carbs (like the Atkins products.) Vegetarians have an area in the freezer section, and I’m pretty sure there are more diabetics than vegetarians in the general U.S. population.

Maybe caulifower-based tortillas to make a sort of “Mexican” pizza on? Any number of recipes and ideas that we have, but haven’t the time to prepare? Thoughts?

I like the idea of cauliflower-based tortillas!! And yes, I am working full-time and do not have much time to mess around with recipes, though some sound good. I agree that so-called “diabetic” foods are too high in carbs and follow the ADA high-carb line, and it would be great to have low-carb foods for diabetics!

A few years ago when low-carb diets were the fad, stores had great low-carb sections, but now that fad has ended and gluten-free is the thing. Both are important. But I guess stores feel they can only cater to the group that has the most buzz.

So yeah…I’d be in the market…not that such goods would ever make my small-town stores. That’s the problem…not the need, but convincing the stores to carry them.
