The ONLY place that I eat out at are at 100% gluten free restaurants. Period. The risk is too great. One tiny exposure causes my antiobodies to rise and to attack my intestinal tract. It takes three to six months for me to completely recover (e.g. Weight, anemia, neurological, etc.). Some celiacs are not so sensitive and can recover within a week or two.
I dine with family and friends. I just order a drink and enjoy the company.
One of my friends has celiac disease and has to be ultra careful with cross-contamination so we grilled hamburgers but we had to keep the patties from touching the buns from start to finish. We basically had to keep any wheat or grain products on a different table for the whole meal. I can’t imagine how a restaurant could possibly ensure no cross contamination for those folks with celiac disease.
A nearby major University keeps cross contamination out of their deep fat fryers (in terms of gluten). They have multiple fryers and gluten containing products goes in the ones designated for gluten and gluten-free products go in the fryers designated for gluten-free. So the fries which have no particular gluten ingredients are all cooked in the gluten free fryer. Which means all their fries are gluten free. This was shocking - I didn’t believe it at first until the chef adamantly explained it to me.
Yep, this is what I’ve started to do as well. I usually also let people at the table know, so that they know not to touch or get near me with their food (I’ve had airborne and contact reactions before).
Suggest watching and RESEARCHING the Movie…What The Health " on Nettflix. This movie has all the science backing it, and will blow you away with knowledge for health.

NO, it doesn’t. Not at all. It perpetuates the lie that eating fat is THE cause of diabetes and even states that the body cannot (!) turn carbs in to fat. Seriously, did the sugar industry fund that movie?! Fat isn’t the root cause of all evil. Sugar isn’t either. Don’t believe people who claim they’ve found the one and only evil type of food that causes all of our diseases and a one-size-fits-all diet that will heal everyone and give us eternal life.

About a mont ago I saw a nutritionist and asked if there was such a thing as an “anti-inflammatory” diet, and the answer was “not yet”. And this morning I read in the local paper that a group at the local university (NTNU) had found omega 3 to induce inflammatory tolerance. I just wanted to share something that´s not exactly on topic, but is linked to inflammaition. I just started low-dose naltrexone (LDN) and so far it works for me. LDN is thought to be anti-inflammatory in general, and three weeks in my insulin sensitivity has gone up, I sleep better and has less tension in my body.

I do react to gluten and grains and have for many years. I remember the Doc who nearly killed me at my type 1 diagnosis telling me to use Metamucil for IBS. In 7 minutes I had severe diarrhea. I wish someone had told me to eliminate them years ago because I’m sure now it did affect me getting type 1 by affecting my bowels etc. and as well as contributing to a host of other issues. As far as the thyroid disease goes I don’t believe it would prevent Graves’ disease if you’re going to get it but it may help your treatment and symptoms to avoid it for Hashimotos. I think we’re talking about long term effects here in other words if you ate gluten your whole life and then stopped it for two years it may not be enough to reverse any damage it may have done.
Another thing I react to are tomatoes as well as vitamin c in any actual vitamin form. Lactose as well to a lesser degree maybe. When I eliminated gluten for cross contamination and all grains I stabilized my Bg crashing every time I ate and gained back 20 lbs or so I had lost last spring when I was hospitalized and had a whole host of digestive issues going in. It’s not perfect now but it’s a lot better. I also found being too thin makes my Bg management nearly impossible.
I don’t trust testing on any of these issues especially allergy testing because I have multiple allergies to dust and other things yet I’ve never tested positive for them.
I had been getting very bad stomachaches and vomiting a few decades ago. My mother had just been diagnosed with lactose-intolerance so I tried cutting dairy out and ! It worked. Recently I’d experienced bloating and intestinal discomfort so I tried switching to gluten free foods and ! It worked. No diagnosis of any food allergies, just experimented.
