Low Carb Easy Fast Meals for 1

I wouldn't add chia seeds because they will expand with any liquid and your shake will be undrinkable! I did that once and it was awful, not sure why I didn't realize this would happen since I know that happens.

I don't worry about carolies overall because most of the time I eat low carb. I find nuts and seeds help me a lot to stop feeling hungry and they help stop me going low when taken as snacks.

Here is the recipe :-)


Ellie's Chana Masala

2 cans/cartons chick peas
1 carton cherry kumatoes or 4-5 medium size kumatoes
2-3 T Olive Oil
1 Can Coconut Milk
1 medium size onion
1 teas cumin powder or seeds
1 teas coriander & turmeric
1 teas salt
curry powder to your taste
2 cloves fresh garlic
fresh minced ginger
fresh minced cilantro

Directions:

Chop and fry the onion in olive oil on medium high heat in a frying pan with all spices(dry and fresh)
Add cut kumatoes & chickpeas- continue cooking on a medium to low heat.
Add coconut milk, keep on medium heat for 3-5 minutes and lower heat and cover to simmer for 15-20 minutes.

Serve with fresh cilantro and lemon- add fresh raw green peppers and cucumbers if you want to. I often add some cheese also: parmesan, mozzarella or jack as well as sour cream. This can be a side dish also.

One of the many benefits of low-carb is that you really don't have to worry much about calories. A common misconception is that a high-glycemic calorie (i.e., bread, soft drink, etc.) is equal to a low-glycemic one (i.e., meat, vegetables, nuts, etc.). When you ingest the former, your body metabolizes the energy faster than you can use it, unless of course, you're in the middle of strenuous exercise. As such, your body will quickly convert it to fat for storage, either through endogenous insulin production in a non-diabetic, or injected insulin in our case, and weight gain results. With low-glycemic foods, the energy is metabolized at a rate that your body can actually use it. Moreover, it's difficult to overeat on a low-carb diet because the sensation of satiety is not delayed/inhibited like it is for proccessed, high-glycemic foods.

Hence, find the low-carb dishes and foods you enjoy the most, eat until you feel full and you'll be pleasantly surprised by their effect on your weight.

It was so good! I plan to make some this week again. I have gained the weight back from dka loss but I seem to stay pretty stable so far now. I will look for low carb green smoothies. The one I made had 36g per shake as I recall. Not really low but low enough for me at the time.

That shake was a nutriblast of raw veggies, berries and nuts flax seed so although it was higher carb the Bg impact was not bad for me since the largest amount from raw veggies usually have low impact for me. I would try adding cocoa nibs, Vanilla and stevia for flavor or maybe lemon juice and things like that- better to make your own flavors with spices and stuff.
