Low fat, low carb. cheesecake, or how to sin and get away with it!


I used the classic three step cheesecake recipe as the basis for this healthy alternative. Combine 2 blocks of fat free philadelphia cream cheese, half a cup of sugarless sweetener (I use Splenda, but feel free to use what you like) and a teaspoon of vanilla extract. Blend the mixture using a hand blender until the ingredients are well mixed.

Add two eggs (I use egg beaters, which works out to 2/3rds of a cup). Blend until the eggs are blended into the mixture. Don't over-blend the mixture. For the crust, I used half a cup of walnuts and half a cup of almonds. i pulsed the walnuts and almonds in a dry grinder to get a coarse mixture. Pre-heat the oven to 325F. Spray some PAM into a pie dish and add the walnut almond powder. Shape it into a crust. Use a bit of PAM to hold it together. Put the pie dish with the crust into the pre-heated oven and toast the crust for about 10 minutes. Add the blended cheesecake mixture to the pie dish and bake at 325F for about 20 to 35 minutes, depending on how "cooked" you want your cheesecake. I bake it for 30 minutes because I want the eggs to be fully cooked. Remove from the oven and allow the cheesecake to cool completely. Be patient!

Chill in the refrigerator for 3 to 4 hours, slice, garnish with grated bakers chocolate (It has no sugar, and has no carbs if you just grate it for decoration). Squirt some lite whipped cream (land o' lakes lite whipped cream has a gram of carb, and 2 grams of fat for 2 tablespoons. A squirt for garnish should have 0.25 grams of carbs, and 0.5 grams of fat), garnish with a leaf of mint or basil, and dig in! You can also garnish with some cherry or raspberry flavor added to a teaspoon of water and a pinch of Splenda.

Carb. content

2 blocks fat free philadelphia cream cheese - 4 grams of carbs I just noticed that i had miscalculated the portion size. Each block has 16 grams of carbs, so that would be a total of 32 grams of carbs.

1/2 cup shelled walnuts - 3.2 grams of carbs
1/2 cup almonds - 9.5 grams

Total carbs - 16.7 44.7 grams of carbs Let’s just round that off to 17 45 grams of carbs.

One slice - (assuming 6 slices in one cheesecake) -=> 2.78 7.5, or an even 3 8 grams of carbs

looks yummie, SRI, you are quite the cook, how are you liking the features on the 722, that is the one I have. :slight_smile:

The Minimed 722 looks good so far. My only concern is the maximum bolus limitation of 25 units. My insulin to carb ratio is 1 unit to 5 grams of carbs. While I don’t exceed 20grams of carb in any meal, I’m concerned about what might happend if my BS spikes because of an infection, or if I have a spike because of a meal that I could not accurately carb count. Apart from that, it looks like a good insulin pump to get hitched to.

SRI, My ratio is 1:5 as well, but I don’t think I have bolused 25 units at one time. I tend to bolus as I eat, but still have not bolused 25 units for one meal in total. My correction factor is 1 unit for 50 points, so even then I don’t have an issue.

argh i loooove cheesecake and i am going to try that. but i can’t find non-fat philadelphia cheese here, will the reduced fat version work too? and what is PAM?

The low-fat version will work too (it will be yummier, but watch the fat and the calories!). PAM is a cooking spray available here in the US. Use any cooking spray that’s available at the local supermarket.
