Mock apple pie, struedel, crisp or tart using Chayote or Jicama. Good recipe, anyone?

With Thanksgiving coming up, I would like to find a low carb recipe for apple pie or crisp. I am particularly interested in using Chayote or Jicama either mixed with apples or alone to cut down the carb count. Anyone have any experience using such recipes? And your review, if you have tried either.
