Three months in, some good news

Type 2, diagnosed in January with an A1C of 6.8. NO meds yet, just diet and exercise.

Would you believe I had a 3 month checkup and my A1C is down to 5.7?!

I am feeling relieved mostly. I have been kind of depressed and feeling like I’m having an existential crisis…like, is life worth living if I can’t ever eat ice cream again? And I still don’t have the answer to that question. But at least I know that the changes I’ve made are actually making a difference for the better, so that will make it easier to keep up on them. My doctor also was scrolling back and pointed out that I am 26 pounds lighter than a year ago, which is also good to hear.

So I came home and ate a salad and some almonds. It’s weird to not celebrate success with sweets or booze, but tonight I can handle it.

Congratulations on your good news. Of course you can have icecream, this is Brian’s recipe from the recipe section:

I have an ice cream maker and here is my basic recipe:

BSC’s Real Ice Cream

4 eggs
2 c full cream
1/2 c splenda (not baking splenda)
2 tsp vanilla extract

On a stove, slowly heat cream until it just begins to simmer, remove from heat. Beat eggs and add slowly to cream whisking to mix it in. Put back on low heat and bring up temperature until it reaches about 165-180 deg F. This should thicken and make a rich custard. Don’t overheat or overcook. If it boils, it is hosed.

Remove from heat, add any flavorings and splenda.

Put custard in refrigerator until it is totally cooled down (sometimes I rush it in the freezer). Please the custard in your ice cream maker and let it crank.

Makes 4, 1/2c servings, 11g fat, 4 g carbs, 6.5 g protein

THAT IS SUCH FANTASTIC NEWS! You should be very proud of your accomplishment in such a short time. And without meds! Very cool.

I had ice cream yesterday. Regular store-bought good-quality ice cream. I had like five spoonfuls. It used to be I could go through a quart in just a few days. Now I buy the little pints and I go through them in a month or so. Like all things that spike my blood sugar I can only eat this as a condiment. Think of it like caviar and not like a meal portion.

I have found that ALL artificial sweeteners cause me severe digestive and other issues. This includes Stevia and Splenda. So, if I want something sweet it has to be made with actual sugar or equivalent. I don’t eat a lot of these things. I get most of my sweet fix from fruit. Mostly apple slices (which I keep handy in a little lemon juice with water and cinnamon) and more so from berries.
