Grains (carbs) of course will lower blood sugar. But why dairy??
Grains and dairy are the major food groups taken out of any diseased body. Grains are highly inflammatory. Dairy is mucus building and made for cows to drink, not human consumption. Grains have been over adulterated. Long story short, the body see's them as foreign substances and the body rejects them and reacts unfavorably to them.
As far as I know, no studies have been done to prove that statement. And the anecdotal evidence associated with it is for other inflammatory diseases--in T1 diabetes, the damage has been done and can not be reversed. The idea of removing grains and dairy from the diet is mostly for lupus, rheumatoid arthritis, MS, and other autoimmune diseases. In most autoimmune diseases, some of the damage can be undone. In T1 diabetes, the beta cells have been killed off--there is no reversal.

We are all different, kaitype 1, and make different food choices. some of us have other conditions as well that play into the decisions. Some people give up or limit certain foods for reasons including personal preference, religious reasons,other personal belief systems, allergies, eating disorders and other medical conditions. Specifically for Type 1 the only food that is commonly limited is carbs because they raise blood sugars. And some people don't choose to do that.
There is lot's of evidence out there. I have been reading the works of Gabriel Cousens, M.D. Other Naturopathic Doctors. A slew of doctors promoting a vegan diet, the paleo approach and so on. I could spend hours of time with you on this and I wont go there. You can do the research.
If we believe only what we where told, then we would still believe that the world was flat.
The small world is getting bigger. There are many new and growing approaches to disease. We are looking far more past symptomology and looking at causality.
If you live within the disease with one answer, you will live that way. If you live in the disease with eyes wide open you can change the world.

Everyone is different. What they choose is different. How they react and live by the disease is different. You are correct. But you will find correlations between nutrition and disease and that is a science.
Cows milk, particularly process dairy is one of the lowest supplementations of Calcium. Higher amounts of calcium is found in plants and seeds. Kale, Bok Choy and Sesame Seeds are a great example.
I am completely aware of Celiac and Dairy. I have been lactose intolerant and I am gluten/grain intolerant. I will soon be testing for Celiac. There is a relationship between the two.

Yes, He was recently diagnosed and will be tested for Celiac soon. Many are supportive of taking Type 1's off of gluten and grains, Celiac or not. It depends on your interests, your knowledge and your agreements to taking a Nutritional Healing approach.
kaitype 1, you came on this board because your son was diagnosed a mere month ago, I assume because you wanted to learn about his condition. You are in the company of 25,000 diabetics with centuries of experience. If you take the chance to get to know us you will find that few of us just "do what our doctors tell us" and most of us are not only well read on our type of diabetes, but more importantly, well experienced. Lots of experience and knowledge with managing diabetes here....if you care to listen.
