You might like Gary Scheiners “Ultimate Guide to Accurate Carb Counting.” I got primitive instruction in a diabetes class, but mostly I had to train myself. Basically, I’ve become a walking encyclopedia of counts. You get to the point where you can look at a plate of food and give an estimate. It is still wrong, but it is as close as one can reasonably get. More advanced topics on how to compensate for protein, glycemic index and fat, well that is more difficult.
