To give credit where it is due, this a Bernstein inspired low carb recipe. I am so excited that 1) I’ve been taking insulin for six months now and I finally have an appetite again and 2) eating is becoming less of a chore and more of a joy. I wanted to share this!! My BG has been beautiful today - no higher than 140 fasting (DP - working to sort that out), but s currently at 112, post lunch.
1 low carb tortilla (Mission Carb Balance available at WMart; 4 grams net carbs.)
1/4 c cream cheese
2 tsp. cinnamon
2-3 drops Stevia - or your favorite sweetener, sweeten to taste
1 tsp maple extract
1/3 c pecans (5 grams carbs.)
Mix cream cheese, cinniamon, sweetener and maple extract until blended well. Spread onto tortilla. Sprinkle pecans onto half of tortilla. Fold over and grill to make tortilla crispy and cream cheese rich and gooy. That’s about 10g carbs, depending on how much cheeseand nuts you use. And its pretty filling. You can also make more to have on hand.
My imagination is starting to run with this and I am wondering what cocoa, cinnamon and cream cheese would be like…and what to eat it with…oh yes, let’s discuss…
