Cabbage And Potatoes

2 tablespoons butter
2 medium onions, chopped
1 small cabbage, shredded
2 green apples, thin sliced
1 1/2 teaspoon white wine vinegar
1 1/2 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 cups vegetable or chicken broth
1/2 cup leftover mashed potatoes

In large skillet, over medium heat, melt the butter and saute onion til golden brown. In crockpot, make alternate layers of cabbage and apple. Add the onion, vinegar, sugar, salt and pepper.

Mix the broth into the mashed potatoes to make a thin sauce and pour it over the cabbage. Cover and cook on high setting for 3-4 hours. Serves 6

Cheesy Tomato Cauliflower

4 cups frozen chopped cauliflower; thawed
1/2 cup chopped onion
1 can (10 3/4-ounce size) tomato soup
1 cup shredded Cheddar cheese
1/4 cup vegetarian bacon bits
2 teaspoons dried parsley flakes
1/8 teaspoon black pepper

Spray a slow cooker container with butter-flavored cooking spray. In prepared container, combine cauliflower and onion. Stir in tomato soup. Add Cheddar cheese, vegetarian bacon bits, parsley flakes, and black pepĀ­per. Mix well to combine. Cover and cook on LOW for 4 to 6 hours. Mix well before serving. Serves 6

Italian Chicken

Whole cut up chicken
3 Tbsp olive oil
1/2 diced onion
1/2 cup mushrooms
or roasted peppers (optional)
1 can chicken broth
1 can diced Italian tomatoes
1/2 cup red wine
2 tsp Balsamic vinegar
2 tsp Italian spice mix (basil, oregano, marjoram)
1 tsp sea salt
1 tsp pepper1/4 tsp nutmeg

Brown chicken in skillet with a small amount of oil. Place in crockpot. Add all remaining ingredients. Cook on low for aprox 5-8 hours. Serves 4-6

Notes: If broth is watery, add 2 Tbsp tomato paste.

Creamy Chicken Breast

6 Skinless Chicken Breasts (boneless ok also)
1 package dry Italian Salad Dressing Mix
1/4 cup Sherry (can use water or broth)
1/2 cup water
8 ounces fat free Cream Cheese

Put chicken in crockpot, sprinkle with entire package of dressing mix.

Add sherry and water.cook on low 8 hours if frozen (4 for thawed).

Remove chicken from crockpot, keep warm. Add chunk cream cheese and whisk until melted. Can serve over broccoli or asparagus. Serves 6
