My fav is bone in short ribs - rub a little cumin, pepper, whatever you like best on the meat - make a broth using cup of stock, 1/4 cup red wine, 1/4 cup crushed tomato, quarter a couple of onions add the ribs and a couple of sprigs of rosemary - put the machine on high and walk away for a few hours. You will have to remove the bones and might want to make a reduction of the broth mix on the top of the stove before serving - makes a tasty gravy for that weird riced cauliflower we are trying to pretend is rice or potato :stuck_out_tongue_closed_eyes:

Here is one of my favorites that I posted a little more than a year ago:

##Brian’s Easy Low Carb Competition Style Chili

2 pounds of hamburger
2 pounds ground sausage
1 14 oz cans of dice tomatoes
1 14 oz can of whole peeled plum tomatoes each cut in half
5 cloves of garlic chopped
2 cups of chicken or beef broth
4 onions chopped
1 cup of chili powder
1 teaspoon cayenne (use more or less depending on taste)
2 tbs cumin
2 tbs masa flour

Brown meat and drain. Place all the ingredients in a slow cooker except for 1/2 cup chili powder and masa flour. Place cooker on high heat for 4-6 hours. 1 hour before serving add last 1/2 cup of chili powder. Mix masa flower with 1/4 cup water and mix into chili. Let rest and cool for 1/2 hour before serving.

This makes about 16 good servings and for each serving contains 400 calories, 22g of fat, 19g of carbs, 5 g fiber and 30 g of protein.

Can one substitute chicken “sausage”?

there’s a few other crock pot recipes in our recipe category

To the Chili? Yes, but why? It wouldn’t really have enough fat to be as hearty and savory.

One whole chicken small enough to fit in your crock pot, one package fajita seasoning… rub chicken with seasoning and cook on low until done. 5-6 hours generally in mine though crock pots do vary… (I’m told you can even start with chicken frozen but I’ve always thawed it out first)

Doesn’t get any more simple than that

Also can do 1c rice, 1 can cream of mushroom soup, one can water. 1 package Lipton onion soup mix , add chicken pieces or pork chops and cook til done 6 hours(ish) or more on low

I love the crock pot

Because we don’t eat treif.

A better solution is to simply use all beef. In fact, I like to use whole beef cut into 1/2 inch to 1 inch cubes.

Will try this!
