I am obsessed with my new Cuisinart Ice Cream Maker! I made a lower sugar version of this and it was amaaaazing and is very diabetes-friendly. I subbed a few tiny scoops of pure Stevia for the agave, and it was plenty sweet. I also threw in some 75% dark chocolate pieces and a few freeze dried banana chips. Possibilities are endless though!

That looks great! I just dug out my ice cream maker and plan on making it as soon as I get some coconut milk. Did you use the full-fat or reduced-fat coconut milk? And about how much stevia did you put in?

I used the full fat - it’s necessary for the proper creaminess/texture. Stevia-wise, I bought Organic Stevia extract from Trader Joe’s and it comes with a tiny scooper - I used 4-5 of those which was more than enough, it probably equalled about 1/4 to 1/2 a teaspoon. I’d start small and taste as you go…

I just posted a discussion under recipes re: truvia, stevia or splenda because I also just bought a Cuisanart Ice Cream Maker and was making low carb strawberry ice cream with it! I have 85% lindt which I plan on using, also some cacao nibs and maybe even a little bit of brandy or Kahlua, lol. . .yes the possibilities are endless!
