Food Changes, Blood Sugar Changes

I have been eating a “Paleo” diet for about 5 days now. I have essentially cut out all grains, most dairy (I am still putting milk in my coffee), refined sugars and even legumes. So, what have I been eating? For breakfast something along the lines of berries with homemade cashew cream, dessicated coconut, walnuts and cinnamon. Lunch, a big giant salad with everything under the moon (including some protein, such as a hard boiled egg). Dinner, marinated chicken, homemade tomato soup and green beans.

In such a small amount of time, it has been incredible (but not actually surprising) to see my blood sugar levels stabilizing. I didn’t even take Novolog before lunch today and had a couple snacks before dinner, and when I checked my blood sugar before dinner, it wasn’t nearly as high as I thought it would have been (154).

The more stable I feel, the more I have the courage and strength to continue with these eating habits. I hope that eventually I will be able to take as small a dose of insulin as possible.

It is difficult to not eat the items I am attached too, and I have a desperate sweet tooth. But, I find that I can eat something like 1/ 2 an apple with almond butter and feel content. I even found some delicious vegan ice cream, Coconut Bliss. It is made with coconut milk and lightly sweetened with agave nectar.

Glad you’re doing well with the changes. Watch out for agave syrup. Despite all the clever marketing by agave companies, it’s a processed product & far from natural Agave is highly refined fructose & far from an ideal sweetener for diabetics or non-diabetics. Agave is 70%-90% refined fructose (the remainder is glucose), compared to high fructose corn syrup in soda that’s around 55% refined fructose. Both are processed in a similar way using genetically modified enzymes.

I completely agree with you on the agave syrup, and as a general rule I do not use it as a sweetener. However, in regard to this ice cream choice, if I am craving something sweet, I still feel more comfortable reaching for the less sweetened Coconut Bliss (as in it is literally less sweet), as compared to regular ice cream that is heavily dosed with refined sugar.

I am strongly opposed to artificial sweeteners, so tend to just choose no sugar or if I want to add sweetener to something, I use a low glycemic date palm sugar.

If my blood sugar were 154 before dinner I would be very concerned.

Hhm, well, everyone is different. I was only diagnosed 2 months ago so for me 154 without having taken any insulin earlier is a good number, I am still wrangling this disease.
