I have been eating a “Paleo” diet for about 5 days now. I have essentially cut out all grains, most dairy (I am still putting milk in my coffee), refined sugars and even legumes. So, what have I been eating? For breakfast something along the lines of berries with homemade cashew cream, dessicated coconut, walnuts and cinnamon. Lunch, a big giant salad with everything under the moon (including some protein, such as a hard boiled egg). Dinner, marinated chicken, homemade tomato soup and green beans.
In such a small amount of time, it has been incredible (but not actually surprising) to see my blood sugar levels stabilizing. I didn’t even take Novolog before lunch today and had a couple snacks before dinner, and when I checked my blood sugar before dinner, it wasn’t nearly as high as I thought it would have been (154).
The more stable I feel, the more I have the courage and strength to continue with these eating habits. I hope that eventually I will be able to take as small a dose of insulin as possible.
It is difficult to not eat the items I am attached too, and I have a desperate sweet tooth. But, I find that I can eat something like 1/ 2 an apple with almond butter and feel content. I even found some delicious vegan ice cream, Coconut Bliss. It is made with coconut milk and lightly sweetened with agave nectar.
