
Here's last night's dinner. It was Quinoa Salad with Spinach, Lemon, and Poppyseeds. It's pretty much what it sounds like: Spinach, quinoa, and lemon segments with lemon vinaigrette and poppyseeds. I'm not a big salad person, but this was really good. I got the recipe from Mark Bittman's new vegetarian cookbook. Four cups of this salad was about 30g carb, but you could lower that by using less quinoa.
