ok, now you can put on this secion your best recipes of soups, desserts, main courses and so on :slight_smile:
I count on you and hope thet you will help not only me but all of us here, who likes vegeterian meals even in minority part :stuck_out_tongue: so, I’ll be first

SPINACH A’LA PATRYCJA :smiley:

Ingrediens (for about 2 persons):
500 g of spinach (fresh or frozen)
one or two of eggs
grated chees
pepper salt
one clove of garlic
oregano (fresh or dried)
two slices of wholemeal bread -> for tosts

Instructions:
Blanch the fresh spinach or put the frozen one on a frying pan to warm up it. Next add egg/s, salt and pepper. Mix spinach from time to time, add sliced garlic. If the meal is heated up enough, add grated chees and oregano. Taste and season if it’ll need it.
Done!

It’s very very simple meal, but nourishing too. My fav. I’m waiting for your recipes!

Vegetable Soup.

My kids love this soup with fresh home made bread. Pick a good curry powder though, we use a madras curry powder. I have two brands and one is far better than the other! Hope you enjoy!

Ingredients
1 Tbsp Oil
120g Onion, chopped
1 Garlic Clove
1-2 tsp Curry powder
200g Potato, washed & chopped
100g Leeks, chopped
100g Carrot, chopped
100g Broccoli, chopped
100g Celery, chopped
1 1/2 litres Vegetable Stock
1 Can Chick peas or flageolet Beans, unsalted in water, drained & washed
Salt
Pepper
400g Potatoes, peeled & diced

Instructions

  1. Heat oil in large pot.
  2. Add onion, garlic, curry, potato, leeks, carrot, broccoli and celery.
  3. Sweat gently for 10 mins
  4. Add stock and bring to boil. Turn down and simmer gently for 20 mins until vegetables are tender. Add beans or chick peas.
  5. In another pot boil potatoes until tender and drain.
  6. Blend soup in blender until desired texture. Season with salt and pepper. Add cooked potatoes. Heat until hot and serve.

Taco Salad
Lettuce plus any combination of beans, corn, bell pepper, avocado, tomato, peas, and crunched up tortilla chips. I use salsa for the salad dressing. I usually add a tiny bit of vegenaise (or mayonaise) to the salsa to make it creamy. When I make this, I usually use canned and frozen vegetables except for the pepper and avocado, so it’s a fast dinner.
