"Frankenlettuce" as a diabetes cure?

So, here’s a winner for you. Apparently, a molecular biologist has added the gene for human insulin to lettuce, makes it into capsules and feeds it to mice, and the mice become euglycemic. Sounds like a bit of a blivet (which, for the scientifically inclined, is x+y pounds of fecal matter in an x pound bag, where both x and y are greater than zero), but who knows? Human trials “are expected to start in the next year.”
