What about baking the whole trout with a prosciutto-sage-shallot stuffing?

Or just pan frying in butter stuffed with herbs and red onion slices?

Really good with the trout, alas trout not very obtainable here.
The lake we live on stocks trout and this time of year, they are hungry! My husband is off today and he just caught two Rainbows. I have just been informed I don’t need to make dinner tonight. I think we’re going to cook them on the grill. YAY
Take whole trout.
Rub outside and in with salt.
Put garlic cloves and halved lemons in the cavity.
Put on grill with wood chips or on a smoker on low heat and cook for about 15-20 minutes, til the skin gets crisp.
Eat it.
Almost the only way I ever cook a whole trout at this point!
