That was an autocorrect thing… but I do like your idea.

My brined turkey is going in the smoker now. For my money that’s the Only way to cook a turkey. I’m going to mix apple and hickory smoke.

Anyone have any tips for estimating Turkey day carbs?

I love my aunties stuffing. My little T1D daughter is almost 2 and it’d be great if I could let her have some. But auntie used a handful of this a some of that, so I know if no percise way of estimating carbs. I went with a general formula of 40 carbs in 7.1 ounces and I gave her half of that.

I guess I’ll watch the dexcom and see how I did.

Thanksgiving is also known as “SWAG-fest Day” around these parts!

We smoked (2) turkeys this year because brining and then smoking is the BEST juicy flavor!

I gotta get a smoker. For that reason as well as about a dozen others. There’s a homegrown company right here in town that makes terrific ones, but they’re pricey.

They are must have… my current one is just a cheap electric char-broil model but it does fine (as long as the wind isn’t blowing). Really the only option I think might be worth paying more for (for some people) is a cold-smoke setup. I think my next setup might be a Bradley electric with cold smoke kit

Sam, we had the same at our family’s Thanksgiving. Brined Turkey done with Apple on a Traeger, as we do every Thanksgiving :slight_smile: Actually, our family dinners (we have them once a week with my mom and dad, brother and his family, my wife and our boys) probably wouldn’t happen without smoking something. My brother, my dad, and I take turns smoking a huge hunk of meat for the family… my turn’s next, and I think it’ll be brisket this time around.

The one I referred to earlier is made by Mak Grills. It’s very similar to a Traeger, but (a) it’s made in the USA, Traegers weren’t for a number of years, and (b) It’s all stainless steel, has better programming, and is built like the proverbial outhouse. Traegers do great work, but these are to a Traeger as Lexus is to Toyota.

I’d like to slow cook brisket for a good 10+ hours… but I’m still learning with brisket, its not my forte.

I have a whole fresh ham to do here soon

There is a BBQ truck that is here 2 days a week that does superb brisket. He really has the touch. He also makes pastrami from it, and that’s great too.
