I bought a scale, but do not have the time to use it. I eat eggs or a cheesestick in the am. About 1-2PM, I’ll eat some leftover meat, maybe some almonds. Sometimes, tuna salad with celery or daikon radish. Dinner is usually the meat and vegetable that I make for the family. There are many exceptions to that last statement. In the past few days, I didn’t eat two meals of pasta and sauce or homemade soup. I have accidentally breaded all the pork chops and didn’t leave one for myself…I can’t eat homemade mac and cheese. I don’t eat chicken a la king…so I usually eat a carton of full fat plain FAGE yogurt with truvia and sunflower seeds for a meal that I can’t share. I do not have the energy to cook two meals all of the time. Last night, I made a stirfry of chicken breasts and celery with some fresh brocolli to take with me to my dd’s house. She has Tamari in her fridge. I did that at 11PM last night because I didn’t come home from the gym until later.

It can be difficult cooking for a family… My family is all eating (mostly) what I eat… I do give them more carbs and will let them eat out when I’m NOT hungry… the kids and I that is… This group has helped me so much with all the support and info out there… I know I’m NOT alone but sometimes it feels like it…

I bought a scale and used it to determine how many carbs I was eating initially but don’t use it much any more.
Breakfast: eggs with bacon or a flax seed muffin or some veggies to make an omelet. Lunch: Salad with cheese, meat and perhaps some olives or leftovers from last nights dinner. Dinner: salad and a one pot dish with meat and veggies various combos and spices. If I go with more than one pot for dinner I might make cauliflower faux mashed potatoes. I usually make a roast and then use it all week for snacks, additions to breakfast or especially cut up in my lunch salad. Favorite veggies green and chili peppers, zucchini, broccoli, cauliflower, collard and mustard greens, eggplant, various salad greens, tomatoes but I limit their quantity, mushrooms(not really a veggie, fungi perhaps?) celery, bean sprouts.
If you are a more adventurous cook than me there are lots of good recipes in old posts in this group as well as several low carb groups in tuD. Plus the web has a multitude of good low carb recipe sites. There’s certainly no need to be bored or feel deprived eating low carb.
Thanks… after we move I will be able to cook more of a variety… I don’t want my famliy getting bored… I havn’t had much time to do all the research that I want…
I am a long time dieter, before my diagnosis. I found that I would weigh and measure for a week or so and then begin go estimate. Every once in a while I would estimate and then weigh or measure to see how close I was. If I was way off I would start weighing and measuring again.
I still do. Over the years I have gotten pretty good at estimating and can usually tell when my estimates start growing.
I usually have an egg, bacon, toast, and water for breakfast. Diet Pepsi, yogurt, and nuts for lunch. Supper is usually some kind of meat and one or two veggies. Very seldom do I make a casserole or mixed dish.
I don't measure my food....
If anything I measure myself, both my blood sugar and my weight.
If I'm gaining weight, time to review where the calories are coming from.
If my blood sugar is high, then carbs need to be cut.
Hey, at the moment I have been weighing my meat and veges, but I guess this is only because I have just started low-carb about a month ago and I also like to make sure I am eating enough to fuel me to my next meal without snacking. In a typical day I would eat:
bf 200g veges, eggs w/cream, cheese, sometimes bacon
lunch 200g veges, 100-200g tuna, eggs, cheese (or cream cheese)
dinner 200-250g chicken/beef, 200g veges, cheese again :P , mayo or other sauces
desert WW Jelly and cream
Sometimes if i am going to the gym/walking etc I might also have an apple or something.
Oh and when I am cooking for my partner and myself I cook the same thing and measured mine, but not his or give him a little extra cheese/cream/meat as he is bigger than me.

I bought the scale that Tu Diabetes recommends, but my life is so frenetic running my kids to campus and back plus cooking for the family and hitting the gym. I have to start weighing my salads. I think that the volume gets me. I don't think that I could eat an apple. I haven't tried fruit in 2.75 years. I'm not on insulin, yet.
