Hi …has anyone made a flourless chocolate ganache cake using part or all splenda?

I am very happy to find such group as I just started a low carb diet a week ago and need some help…

I found another website that has great low carb recipes. I made "Almost Ice Cream " for my Easter Dessert. It ws great and only had 2 carbs for 1/2 cup. The site is called Diabetes Connect and they have a whole section with lots of great recipes.

Hey Elaine – I’ve made a flourless chocolate cake, and you can find the recipe on my blog. Its EASY to make, and delish. There is a recipe for icing there too. Its near the end of my blog at http://blog.360.yahoo.com/blog-NbDgUzQhfrJTXdmg.DfXS.Tx?l=6&u=7&mx=7&lmt=5

I used Splenda to sweeten it and made it with almond meal.

For a Ganache glaze:

2 1/2 cups heavy cream
20 ounces fine-quality bittersweet chocolate (not unsweetened), finely chopped in a food processor

Make ganache while cake bakes:

Bring cream to a simmer in a 3- to 4-quart saucepan and remove from heat.

Whisk in chocolate until smooth. Transfer ganache to a bowl and chill, covered, stirring occasionally, until thickened but spreadable, about 4 hours. (If ganache becomes too thick, let stand at room temperature until slightly softened.)

If you find the Ganache not sweet enough, you can stir in some Splenda to sweeten to your taste.

Pour on top of the cooled cake.

I prefer a cream cheese based icing instead, as it has way less sugar and fat that the Ganache Glaze.

hello from France. I thing I’m going to learn a lot with you!

For my sweet tooth iI eat A carbmaster Yogurt avail at Ralphs Market with 4 Grams of carb tastes great, and does not raise BS

I’d love to find a low carb recipe for corn beef hash that doesn’t use parsnips or the such for the potato…1/2 a potato wouldn’t increase the carbs that much. I’m looking for single servings. Anyone hear of such a thing?

What’s the best low carb bake mix out there for price and taste? I want to make a pizza for some relatives this week. Thanks to all!!!

Faux Mashed Potatoes

Cauliflower
butter or margerine( I use I can’t believe its not butter)
1% milk
Lite sour cream

Cook cauliflower, drain well. Then add marg. milk and sour cream. as you would reg. mashed potatoes. Blend well in blender to make creamy. It really does tasted just like, or very close to mashed potaotes!

Roasted Asparagus with Shallots

2 bunches fresh asparagus spears, trimmed
4 medium shallots, thinly sliced
4 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar, divided
salt and pepper to taste
Directions
1.Preheat the oven to 400 degrees F (200 degrees C).
2.Place the asparagus and shallots in a large bowl, and pour the olive oil and 2 tablespoons of the vinegar over them. Season with salt and pepper, and toss to coat evenly. Spread the asparagus spears out in a single layer on a baking sheet.
3.Bake for 20 minutes in the preheated oven, or until tender and bright green. Shake the pan about half way through to roll the spears over so they cook evenly. Remove from the oven, and drizzle the remaining vinegar over the asparagus. Toss lightly to coat, and serve immediately.

Judith,
I made your Walnut cake for my Birthday Cake last week, I ended up using Pecans instead and WOW Was it Wonderful!!! I will definitely be adding it to my permanent
recipe collection. It kept well and the rest of my family also enjoyed it. I did not add any frosting as it was plenty rich just the way it was. Thanks! Deb~

Dear Judith,
I haven’t done the research on the carb count for that one yet. But I might have another one that I have used that has it already listed.

These are actually the ones I make the most often. I usually go through the process of pressing them out, but I am going to try rolling them out (most likely this week) as my kids have discovered them and I go through them rather quickly now. So I figured I’d better find a faster production method… They are so handy to just snack on with a folded up (divided) piece of cheese. I am always looking for something handy to grab. I hope you like these.
Hugs,
Deb~

Low Carb Ideas for Brown Bagging

You may want to check if walnuts, or some other type of nuts, are low-carb enough.

I love the occasional piece and benefits of Sprouted Grain Bread or cereal. With the flavors and variety of these currently available (without flour) is there a need for low carb unhealthy processed substitutes for "regular bread"?

I recently discovered that MANY people don't accept that bread is a heavily processed food.
I eat no commercial bread, but have a recipe for a flax bread.
