I discovered the beauty of my food processor and a bunch of nuts yesterday. I got creative and decided to process 1 cup of almonds with 1 cup of dates, 1/2 cup of peanut butter and 1 1/2 teaspoons of vanilla extract. Did you calculate the amount of natural sugar in the dates?
Yes in the dates there is a total of 5 and 2/3rds grams per cookie so a serving size of 3 cookies is 17 carbs. (the additional carbs are from the peanut butter but you can get sugar free if you want). The dates are 33 carbs with 12 fiber per 1 oz serving, I utilized 1 cup which gave 120 net carbs, plus I added my 16 carbs for the total carb count of 136 then divided that by 24 to arrive at 5.66667 grams per cookie. And I'm a geek so I also calculated the protein to 2 grams per cookie Enjoy :)
