I’ve found that one of the most important parts of managing my T1 is making sure that not only am I healthy, but I don’t feel deprived. My wife cooks me the most amazing meals that still keep my blood sugar in check, and I wanted to share! Chicken Cacciatore, Shrimp Scampi…I even had a delicious black bean lava cake for my birthday. Seriously, these are amazing.

I tend to go with simple, not because I don’t love to cook (I do) but for reasons of time and predictability. Especially predictability.

Example: 8 to 10 ounces of protein (can be anything; fish, chicken. beef. pork–no soy). and a vegetable. One of my favorites is sweet red bell peppers. I have to resist the temptation to eat them like candy.
