That’s funny that I’m reading that tonight. We had that discussion tonight, my daughter always had sensitive taste buds and didn’t like much of anything, and I like most things, and she always said I don’t have taste buds because I like everything.
One suggestion - collect some lowcarb recipes, then look through them to see if there are any that look worth fixing to see if you like them. Dairy foods usually contain some lactose - a type of sugar that isn’t sweet, so expect some effect on your BG; although not as much as white bread, for example, if making them does not add sugar.
You may need to sample more types of vegetables, especially the green types, to get more information on just which ones taste bitter to you. Expect most of the root type vegetables to be high in starches, and therefore give more effect on your BG.
One I like is broccoli in cheese sauce, so have you tried that?

How about fish or scrambled eggs to give you more protein?
I have huge consistency issues. I can’t do celery because of the stringy stuff and mushrooms are a major ick in the mouth.
Im like that for most squishy foods. I really like a crispness to my foods. mushrooms, tomatoes, bananas all get tossed into squishy food for me. I really tried to like them too. =^/
You are a brave soul for TRYING to like them. I can’t do that very often! I really wonder if there is something in our brains that makes us like or dislike foods. At least, I know everyone’s different – one man’s meat is another man’s poison, or something like that!
with veggies, when in doubt, cover it up! Im making cauliflower leek bisque. Tons of veggie goodness, tastes just like potato leek soup! =^)

I am Irish as part of my heritage and I like Corn Beef and Cabbage on the rare occasion but I don’t want to do the work to cook it. LOL
I love corned beef, though my mom is not a fan – except for corned beef hash! So I rarely got it growing up and haven’t really had any in a few years. I missed it again this year, but that’s OK. There’s always another day! BTW, Irish here, too – Irish and Italian!
