Venison/pork meat loaf last night, it was totally awesome. (Secret ingredient - a bit of unsweetened cocoa, and some sriracha. No more secret!)

Zoe, I believe in moderation. I fully expect that a report will be issued tomorrow warning us of the dangers of drinking water!

I like to be flexible in my protein choices : pork , beef, seafood ,poultry , lamb and I don't forget cheese .Dutch people are not called Cheese Heads for nothing :) and far too frugal to send you our RED meats even if you pay for shipping !!

While we're all drooling over our red meats, can anyone point me in the direction of a brand of bacon or sausage that doesn't use sugar or nitrites in the prep?

I'm having a heck of a time finding one.

Do you have Kroger supermarkets? They have a brand (house brand--Private Selections) that's uncured, which means no nitrates. I've also gotten uncured bacon at health food stores.

Nope, no Kroger in Seattle -- I don't think they're in Washington at all. However, if one house brand has that, maybe they re-label for other house brands? I'll have to check it out. I have heard rumors of a butcher in West Seattle that makes his own, nitrite-free/nitrate-free/sugar-free sausage. I'm going to have to track him down, too.

I am trying to go 100% additive-free, chemical-free, sugar-free, starch-free on my diet and so far it seems to be really helping me feel better -- the MUCH lower blood glucose from going <= 50 gm of carbs/day is probably helping a lot, too!!! Now, if only I could lose some weight. Sigh. I quickly lost 20-lbs. but I've been plateauing for a month now. Fewer carbs, MUCH less insulin (less insulin necessary, I'm not withholding it at all), and more exercise = plateau? Really? Gah. Whoever said you don't have to count calories on a ketogenic diet never met my metabolism.

Way to go, girlfriend! I think calories do count. Too much protein will stall weight loss, too.

Bet you can find uncured in Seattle. Check out health food stores. I live in the sticks & we have it in several stores, different brands.

I try to keep an eye on the research studies. Unfortunately, they are all mostly utter nonsense. To truly determine whether red meat (or anything else for that matter) causes health problems, you need to do a controlled experiment, and this has not been done. Instead, we see lots of observational studies, mostly all poorly done. Things are so complex that it is often difficult to isolate any one factor. This is the case with the most recent report on red meat, here is Dr. Eenfeldt take on the matter. Unfortunately, the study is useless, too many key variables are significantly confounded. The authors should know better, but they don't, it is not medical science it is medical art.

And you are right, I do worry about pink slime as well as other bad things in the food supply. Not because I think meat is bad, but because I think big corporations control our food supply and they don't look out for us. This is also why I wash my spinach and other greens even if it says triple washed.

I am nowhere close to eating "too much protein" according to any of the protein requirements calculators I can find.

Trader Joe's has a great bacon that is every-thing free. Nature's something-or-other.
