Thank you for sharing the link! This looks like good soup. We try to have soup every day, as it is a great way to get more veggies into my diet. My husband eats a lot of veggies, but I don’t care for them like he does. In soup they are ok though! We generally use chicken broth, ground turkey or cut up pieces of skinless chicken breasts, plus whatever veggies we have on hand…onions, peppers, cabbage, carrots, zucchini, turnip, etc. Also, we use dried beans to add to the soup. No potatoes, pasta or rice. It is a tasty, healthy and low carb soup.
I shared the recipe with my relatives over Thanksgiving as well, and my mother made it and loved it as well. Good way to get your spinach, ooo and you could use ground turkey versus ground beef.
