Trying the Vegan thing out. Anyone know any good healthy Tofu recipes that are not hard as hell to make would be quite helpful. If you would have asked me as a teenager that one day I would be asking for recipes for food I would have fallen over laughing. No really, would have cracked myself upo on the thought. Cracking up now :)… Any tips are helpful. Thanks in advance.
Is there a particular reason it has to be vegan?
I know lots of fantastic tofu dishes from the Asian/Oriental repertoire; virtually none are vegan. They tend to pair tofu with meat or seafood in a tasty sauce. Most are low carb and diabetes-friendly. Traditionally they would be eaten over rice but I use cauliflower ‘rice’ or a bed of spinach leaves. A very simple yet tasty home-style dish is tofu with minced pork in a light sauce (mostly chicken stock thickened with a very small amount of cornstarch). Or braised tofu with shrimp, belly pork and vegetables is also low carb. My mum also does a tofu-meatloaf made of mashed tofu, minced pork, chopped water chestnut and egg, which is baked or steamed like normal meatloaf.
You can also use tofu as a low-carb ‘wrapper’ which can be filled with whatever you’d normally fill a potsticker, ravioli or dumpling with. See for example this recipe
Hmmm. I will hold my tongue on the vegan thing. Personally, I try to avoid soy and even then limit to fermented soy, like tofu. Tofu is bland and tasteless and has very little holding together. As such it picks up any flavors, so it is easy to marinate, I like it spicy. But you have to be careful preparing it as it tends to fall apart. A favorite way to prepare it is marinated in Sriracha and then stir fried. I find that it can be used in many dishes as a filler, marinades with soy or other flavors. I like to “press” my tofu. I buy firm, but then wrap the tofu in a towel and sit it under a brick for a half hour, squeezing out extra water and making it even more firm.
An easy toful recipe - steam 1/2 container of Natsoyu or other Japanese style extra firm tofu; saute greens in olive (or other oil) serve with quinoa. I eat this for dinner about twice a week. You can add seeds or nuts for some crunch and if you prefer and can handle rice - go for it.

Agreed with bsc over the pressing-out and stir-frying. Best way to get some reasonable texture and taste is to buy extra firm (or the homemade/bulk stuff at the greengrocer) and let it drain under pressure for several hours. Once it is drained, it can be cubed, briefly marinated in a mixture of soy sauce, spices (such as five-spice powder), and a finishing oil (such as chili oil or sesame oil), and then stir-fried in hot peanut oil. Once the outsides are golden, add in the rest of your stir-fry veggies and seasonings.
I know there are recipes in which seasoned tofu can be substituted for scrambled eggs or soft curded cheeses (such as cottage cheese or ricotta), but I’m not familiar with them offhand. These preparations do require seasoning for the tofu to taste more like what they’re subbing for and less like, well, tofu.
Soft versions of tofu, such as “silken” tofu, are often substituted for cream in shakes and smoothies, and for raw eggs in ground meat dishes (such as meatloaf, wontons, and dim sum). In these applications, only the usual seasoning for a non-vegetarian dish are needed.
Are you into spicy foods? Tofu can soak up a lot of flavoring without using up that many carbs, which has been great when I went for a carb free meal. I cut up a block of extra firm tofu into cubes and sauteed them until they were getting browned with cumin, cayenne, and barbeque sauce plus a little bit of olive oil. My boyfriend and I made this recipe this week when I was sick to clear up my sinuses and it worked wonders. Plus a side of green beans with feta made it GREAT. Feelings tons better now too =)
That sounds good, will try that as well. I make an insane Veggie burger wrap. I have made it for family, friends and strangers I see on the street. Joking obviously about the strangers. I make it spicy because I love the feeling of my mouth on fire.
