I love stuffing, and I looking for ways to adapt recipes so that they are not so carb heavy. Any ideas?
This is what I use. It’s like cornbread stuffing. I make the almond bread a day before so it drys out some. Or, you can cut into pieces & bake it in a low oven after it’s cooked to dry it more.
Almond Bread-- 16 net grams for the entire recipe because it has 17 grams of fiber.
1.5 cups almond flour
1/2 tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
(Optional for using for stuffing–1/2 tsp liquid Splenda I use Fiberfit from netrition.com–zero carbs).
Preheat oven to 325.
Put all ingredients in a blender & blend until smooth.
Pour batter into a well greased baking dish.
Bake for 20-25 minutes. It won’t brown.
Let cool before removing from pan.
Sautee a small amount of onion in butter until soft. Add whatever herbs you like–sage, parsley, thyme, chives, along with freshly ground pepper & garlic. If you like mushrooms, they’re a good addition. So are pecans. Add the crumbled almond bread & mix well. If it looks too dry for your taste, add a little chicken broth.
You may not need to chicken broth for what’s going into the turkey, but may want to add broth & salt to stuffing that’s being cooked outside the turkey.
Thanks for asking this! Can’t wait to see people’s responses. I gotta try Gerri’s almond-bread-stuffing recipe - I made almond flour pancakes once in a fit of craving, and they were tasty, so I bet this would be great!
I like good, old, traditional flavor here, so I sautee chopped up onions, carrots and celery sticks, add bread (yes, I do, I just use low carb bread or diabetic certified pita bread from Joseph’s Bakery), sage, paprika, pepper and for the magic ingredient I add very finely chopped oysters (a small can is plenty). It all goes into the bird and makes a nice, savory stuffing
Never had to do a low carb stuffing because only the adults in our house will touch it. We have one child with diabetes. I like the idea of the almond bread recipe, being so low in carb (there are so many other things that have carbs also on Thanksgiving day). If I had to have bread, I would do half the almond bread and half low carb bread cubes, and follow the recipe on one of the stuffing bags to get the right amount of liquid. To our stuffing I always add half cup applesauce, one apple, diced, celery, onion, a few cloves of minced garlic and sausage (a mixture of Italian sweet and hot) crumbled and cooked out of their casings. I do not put as much butter as called for and for the liquid I use chicken broth instead of hot water.
