Low-Carb Stuffing for the holidays

I’m so proud of myself for figuring this out. It’s high fat and calories, but I’m in maintenance mode on the weight issue now and can allow such treats once in awhile.

The key for lo-carb is Wasa crackers, the key for flavor and satisfying richness is tons of butter & favorite herbs.

I used about 2/3 package Wasa Fiber crackers plus a couple sourdough ones. A whole 1/2 pound of butter, melted in a big pan. Sauteed about 10 cloves of garlic and a lot of shallots separately. Broke up the Wasas in the butter and stirred it around as they softened a bit (found with just water or broth they went right to soggy). Added the garlic and onions and a selection of herbs–a Provence blend was really good, I think (rosemary,fennel, savory,thyme,basil, tarragon, dill, oregano, lavender, chervil, marjoram). And then about 3/4 to 1 cup organic chicken broth—added a little at a time and stirred so as to feel whether or not it would go soggy. Stuffed the holiday bird and enjoyed it muchly! Leftovers kept just fine, too.

Also made a great cranberry sauce with frozen organic berries and Splenda. I have always stayed away from artificial sweeteners, but for this occasion, it was worth it!..
