I love this accompaniment to most meats. Carrots, Although a No-No in Dr. Bernstein, are actually only about 6-10% available carbs, so 100g(4 ounces) gives about 6-10 g carb. Younger ones are lowest.
Scrape carrots and trim top and bottom. slice thinly 3mm? ( I use a mandolin slicer) into rounds. Put into microwave dish with a generous knob of butter. No water is necessary and don’t add salt. Cover and microwave on full power for 3 minutes, check if soft.
If not cook a little longer untill all the rounds are soft and shiny. the actual time will depend on your microwave and the amount of carrots and the shape of your dish
