I've been eating this lately... it is great.... I got it from diabetic welfare queen and she got it from BadMoonT2
1/4 cup flaxseed meal 1/2 tsp of baking powder 1 tsp of cinnamon 2 tsp of truvia or sweetener of choice (optional) 1 egg or egg beaters equivalent 1 tsp of light olive oil or light cooking olive oil 1 coffee mug (not a cup)
Mix all the ingredients together in a coffee mug (not a cup). Microwave for 1 minute... and ouala! I added a small amount of chopped walnuts to mine, before nuking (about 6 grams)... and ate it with pumpkin flavored cream cheeses spread. :) It is very, very filling... 248 calories, and pure fiber and Omega 3 fats. NO GLYCEMIC LOAD. :) Enjoy!
NOTE: I leave out the truvia and put butter on it instead and as a result it is only 8 carbs (all from the flaxseed)
I posted this on another thread, it originally came from Kristin. One person who tried it said it was a little goopy. I don't really measure the ingredients, I think I use more flax and less butter, so you might have to tweek the quantities. For me it comes out like a cake brownie. I usually add pecans. My glucose tends to go down not up( testing 1,2 and 3 hours post prandial) even with a little Ice Cream on top!
This is my FAVORITE chocolate cake, which is VERY low carb. Goes best with some ice cream or whipped cream!
3 Minute Chocolate Carmel Flax Cake for One
Ingredients: 2 tablespoons melted butter(0 carbs) 1/4 cup Ground Flax Meal (5g carb, almost all fiber- check the packaging) 1 tablespoon Cocoa Powder (2 carbs) 1/4 teaspoon Baking Powder (1 carb) 2 tablespoons liquid sweetner or Davinci's Carmel Sugar free Syrup (0 carbs) I use 2 packets of stevia. 1 Egg (0-1)
How To Prepare: Melt butter in a small microwave safe dish, mine was about 2 1/2 inches x 5 inches and about 1 inch deep. Mix in all ingredients and microwave for 1 minute in the same dish.
Let cool slightly and enjoy.
Good with ice cream, whipped topping or plain yogurt.
Is that before the butter is melted you measure 2 tablespoons OR do you melt butter and once it is liquid put it in a measuring spoon and measure 2 tablespoons.
Oh and is the cocoa powder like the same thing you used in chocolate milk? Or is it in the baking section
Cocoa powder is in the baking section... Also, butter comes in sticks with the measurements on the wrapper, so all you have to do is cut it where it's marked as 2 tbsps. :) You can then melt it.
We have tried it it always comes out soggy BLAH I dont know what we are doing wrong . But my favorite microwave food is
I get turkey pepporonis but them on the plate and but a little cheese on each one but in microwave for 1 :30 I like my pepporonis crispy so if 1:30 is not long enough and 10 secs at a atime they are verrryyryryry good
